Jersey City Chef’s Table at Hudson Table

Sample some of the best dishes from four Jersey City chefs at Hudson Table, while sipping on wine curated by Mana Wine. Event will include chef interviews, Q&A, cooking demonstrations by each chef, food and wine samplings, and take-home recipes. A delicious celebration of chefs and cuisine!

The Venue:

Hudson Table  is a boutique recreational cooking school located in Hoboken, NJ.
Their charming kitchen studio serves as a common venue to unite friends, strangers and locals together with a common interest in mind: food. Their goal is simple – to create a unique culinary experience. HT offers a wide variety of culinary experiences in either a hands-on or chef-led demonstration class setting. In addition to cooking classes, Hudson Table is also home to private events and chef competitions.

George Politis is a third generation restaurant owner operating two locations in Hudson County, New Jersey.  His family opened their first GP’s Restaurant in 1934, and George has continued their tradition of fresh, classic Italian dishes using locally-sourced ingredients producing a menu that is both heartwarmingly familiar and refreshingly unique.

While the cast of characters at GP’s know how to prepare great plates, it is equally as important that they know how to treat guests when they walk through the door. Many GPs employees have been with them for over 20 years and are proud of their extended family that uphold standards of excellence in service.

Emma Taylor is the Chef and Owner of Milk Sugar Love , Jersey City’s organic ice cream. Formerly an Art Director, Emma changed careers to pursue her love of pastry, completing a degree in Pastry Arts and working in France and in New York City before launching her own business.

Emma started Milk Sugar Love in 2013, crafting and selling small batches of her flavor-forward ice cream from a small pushcart at local farmer’s markets. She now operates a bustling ice cream shop in Hamilton Park and has recently launched the Milk Sugar Love ice cream truck to bring her organic ice cream to all of New Jersey.

Alexandra Sartoga is a chef from the Bergen-Lafayette area of Jersey City. Graduating from the CIA, she went on to work as a private chef for the Executive Dining Room at Bank of America. She now is the chef owner of Garden Steaks Catering. Garden Steaks works to provide healthy and delicious meals to children in the Hudson County area. Working to provide school lunch programs with a focus on locally sourced and organic ingredients.

She spends her free time working with an organization she co-founded, Feed JC. Feed JC is a hospitality youth mentorship program that teaches high school students both culinary arts and service skills. Last year in conjunction with the Jersey City Parks Collation, Feed JC had a 7 event series of dinners in the park. The proceeds were used to feed over 300 homeless people on Christmas Day. This year the organization is working to do community dinners for 500 Jersey City residents.

Chris Siversen studied at the French Culinary Institute in New York City.  His experience includes landmark restaurants, Alison on Dominick Street, the ‘21’ Club, and Pamela Morgan’s, Flavors. More recently he spent almost ten years creating and overseeing menus for the Glazier Group’s Twenty Four Fifth and Bridgewaters in NYC, and the Westminster Hotel in Livingston, New Jersey. Along the way, Siversen has cooked for Martha Stewart and Steven Spielberg, Versace, Armani, Chanel, and Marc Jacobs runway shows, and for Bill Clinton and George W. Bush. He has appeared on Fox News, Food Network, and WNBC. Siversen’s latest project, BURG, opened in November 2015 in Newark’s Military Park.

Maritime Parc has been recognized by many New Jersey and New York publications for being among the best the state has to offer. Maritime Parc has been on New Jersey Monthly’s Top 25 Best Restaurants each year since it opened.

WORLD CUP FINALS VIEWING PARTY!

We had an amazing turnout for the Jersey Girls Food Tours World Cup viewing party at The Iron Monkey held last Sunday, July 13th.  There was a nice representation of fans from each team, some with painted faces courtesy of JGFT.  The entire bar was decorated with flags, banners, streamers, party favors and various giveaways scattered amongst the tables.  The big game was featured on the 72″ projector screen, with trivia games played pre-game and halftime.

Guests indulged in an International buffet of German bratwurst, potato pancakes or ‘latka’, steak skewers with Argentinian chimichurri, roasted pork, Brazilian style fried plantains, and fries served with mayo and a variety of toppings.  Bar specials included an array of German, Belgian, and South American beers and various themed cocktails for $5.  Dessert was provided by Cholita Dessert Bar and featured dulce de leche and Black Forest cherry mini cupcakes.

The party was a ton of fun and we were thrilled to see everyone come out and enjoy themselves.  Thanks again for supporting JGFT and we look forward to seeing you at the next one!   A special thanks to Chris Capaci of Capacity Images for taking photos of the event, capturing all the great moments.  Also a huge thanks to Adriana from Cholita Dessert Bar and Steve, Cindy and the staff at The Iron Monkey for their partnership.

If you haven’t yet learned to navigate your way to Jersey City, let us help you out: Take the PATH during the week and a newly discounted weekend ferry service from the World Financial Center. If it’s been awhile since you’ve been there, you’re missing out on a crop of good restaurants. Here, we’ve rounded up Jersey City’s 10 best plates on menus right now, from meatball banh mi and pork belly guac to black and white seafood noodle bowls an ocean apart and river away.

10. Spring Pie, Razza, 275 Grove Street, Jersey City
You know what you’re getting when you duck into spinoffs of John’s and Two Boots, so take a chance on Razza, a bare-bulbed tavern from the team behind the pies at Maplewood’s Arturo’s. The wood ovens here bake dough made with a wild yeast culture worthy of a dissertation into golden crusts; the ever-changing spring pie is topped with fresh mozzarella, parmesan, and whatever’s growing in chef Dan Richer’s garden, including these spring onions and asparagus.

9. Market Fish Mazemen, Union Republic, 340 3rd Street, Jersey City
After Communipaw Avenue early gentrifier MAE closed its doors in late 2012, chef Gregory Torrech and partner Noah Sexton relocated downtown and opened this cafeteria in what would become Urban Ready Living highrises. Union Republic combines all-day coffee shop, butcher counter, grocery, and noodle bar, (and soon, a bar for drinking, too). While the long winter made Torrech’s nose-to-tail ramen a must-order, this summer, we’re favoring the market fish mazemen, a lemon scented no-broth noodle bowl topped with charred sugar snap peas and a cod croquette that pierces as easily as the soft egg beside it.

8. Spaghetti Nero, Thirty Acres, 500 Jersey Avenue, Jersey City
Momofuku vet Kevin Pemoulie has made seasonal pastas a menu staple at Thirty Acres since its opening, and the from the three current incarnations, we’re digging this creamy abyss of squid ink spaghetti tangling silky cuts of sea urchin, wispy sprigs of parsley, and rough chopped jalapeño that brightens the bowl and dances on the palate.

7. Veggie Schnitzel, Mordi’s Schnitzel Truck
For years, a “coming soon” sign for a second outpost of Chelsea Market’s Buon Italia anchored the vacant ground floor of Jersey City’s Trump Plaza (88 Morgan Street), and as the weeds grew up around it, so did a new gathering spot for the neighborhood’s ever-evolving food truck scene. Its most recent addition is an ex-Eataly sous chef frying up his childhood favorite Israeli street food inside Mordi’s Schnitzel Truck. Three varieties of breaded, beaten chicken cutlets are on the menu, as is this almost-healthful alternative, which layers freshly fried crumbed eggplant with five fresh and house-pickled veggies stuffed in a homemade parsley tahini- and harissa-absorbent baguette from Marie’s Bakery in Hoboken.

6. Banh Mi, IncrediBalls Truck
Come lunchtime on Trump Plaza’s west side, and in the evenings at Groove on Grove near the Grove Street PATH station, you’ll find the year-old IncrediBalls truck, where an ex-Maritime Parc bartender bakes then steams ground proteins destined for spongy Balthazar rolls. Eight of the chef’s 80 regional recipes are always on the menu — Swedish, red sauced Italian, Jamaican jerk chicken, smothered pork, and BBQ — and the truck also serves up the city’s most inspired banh mi, built with coriander- and fennel-spiked pork balls, crunchy pickled carrots and jalapeños, and a kicked-up soy Sambal sauce infused with cilantro stems.

5. Guacamole Trio, Orale Mexican Kitchen, 341 Grove Street, Jersey City
Three years after Jersey City’s hipster taqueria Taqueria expanded to Manhattan’s Orchard Street, Grove Street’s Orale is following suit: A second location is taking over the Cafe Frida space on 98th and Amsterdam. It’s worth the trip from downtown on the PATH to the Jersey City original, though, for the seasonal serrano-blended guacamole served myriad ways. Go for the trio, and pick our three favorites: el naco made with chunky braised pork belly, el fresa made with a finely diced fresh fruit salad, and blue demon made with creamy Cabrales blue cheese and toasted pepitas.

4. Onion Rings, Park & Sixth Gastropub, 247 Washington Street, Jersey City
The bar at the Washington Street spinoff of Grove Street’s Park & Sixth sandwich shop gets busy early with off-duty bond traders and Catholic school teachers, and bar plates keep the front room full all night long. Order some of the best onion rings on either side of the Hudson: A tangy tomatillo-buttermilk shell clings to the fat springy rings, and they’re enlivened further by a dunk in a pool of pink vodka sauce. The only drawback? You can only get them as a Wednesday night special.

3. Thursday Night Supper Club, Sam AM, 112 Morris Street
This Paulus Hook cafe keeps commuters lined up all day long for Stumptown coffee and bacon, farm egg, and smoked salmon breakfast sandwiches on Amy’s Bread ciabatta. But it’s worth stopping by on a Thursday night, when the kitchen stays open past 6 p.m. to serve an evolving $45 five-course supper with dishes like tiger prawn ceviche, braised shortrib, and glazed plantains. Fun bonus fact: Meals are frequently inspired by the regional flavors chef Francis Samu discovered on a skateboarding pilgrimage to New Orleans.

2. Hot Roast Beef Sandwich, Carmine’s Italian Deli, 165 Mallory Avenue
Squads of police and firemen from as far away as Kearny flock daily to this neglected west side neighborhood for the city’s best Italian, and you should follow suit so you can grab one of owner Carmine Scalia’a signature hot roast beef sandwiches saturated with fresh pulled mozzarella and a mouth-watering gravy stirred all day with a wooden paddle. While you wait for your takeout order, ask for a sample of today’s soup — you’ll soon find yourself leaning against the soda cases slurping down what feels like an entire bowl of lentil or minestrone, gratis.

1. MP Burger, Maritime Parc, 84 Audrey Zapp Drive
Each Thursday, the bar at Liberty State Park’s Maritime Parc griddles up grass-fed brisket-, short rib-, and chuck-blend patties, and then smothers them in melted Tomme (a creamy goat’s milk cheese), grilled onions, and special sauce. You can nab one for $20, a price tag that includes a bowl of duck fat fries, a half dozen oysters, and one of eight beers or wines by the glass. This killer burger also serves as your first taste of BURG, chef/owner Chris Siversen’s forthcoming beer garden burger bar dishing out DeBragga blends alongside frozen old fashioneds in Newark’s Military Park this August.

The hottest new foodie neighborhood has a posh wood-fired pizzeria, a buzzed-about hipster bar and a new eatery on the way from Park Slope’s most-hyped chef.
No, it’s not Bushwick, Bedford-Stuyvesant, Ditmas Park, Greenwood Heights or Ridgewood. In fact, it’s not even in New York state.
Apparently all those years of “sixth borough” jokes have finally rubbed off on Jersey City, which is in the midst of a culinary renaissance.
Star chef Dale Talde, best known for cooking up a storm on Bravo’s “Top Chef” and his well-reviewed eponymous Park Slope eatery, has partnered with Anthony Carrino and John Colaneri, the stars of HGTV’s “Kitchen Cousins,” to open a second location of his Asian-fusion restaurant Talde in Jersey City next year, as well as an Italian market next door called Carrino Provisions.

Talde admits he was hesitant to cross the Hudson — just as he was hesitant to cross the East River. It’s only been a few years since he left his stomping grounds of the lower East Side to open the original Talde, along with his other Park Slope joints Thistle Hill Tavern and Pork Slope.
“It was the exact same reason I was skeptical about going into Brooklyn,” Talde says. “I had just never been there.”
Carrino and Colaneri convinced Talde and his business partners to check out a downtown Jersey City building they are renovating — a giant, light-filled space built in 1892 as the Garden State’s first telephone switching station for calls between New Jersey and New York.

The Jersey City-based cousins had hoped to convince Talde to open a stall in a planned Italian market in the building, but after seeing the space and visiting other new eateries around Jersey City, the chef and his business partners opted to take over half the ground floor for a new restaurant. The top floors of the building at 8 Erie St., between Bay and First Sts. — once Jersey City Police headquarters — will soon be convereted luxury apartments.
“It reminds me of all the Brooklyn neighborhoods,” says David Massoni, one of Talde’s partners. “There are corners I’ll turn down and it feels like Bushwick. Other corners I’ll turn down and it feels like you’re right in the heart of Park Slope.”
The new Talde won’t be Jersey City’s first restaurant with New York cred. Thirty Acres, opened by Momofuku alums, has been luring Manhattanites over the bridge since last April. Barcade, an offshoot of the popular video game-centric Williamsburg bar, gives downtown Jersey City a craft beer option. Locals cite restaurants like Mediterranean-inspired Satis, gastro pub Marco & Pepe and Mexican standby Taqueria as other reasons to stay in town.

“By no means do we feel like we are the trailblazers. Other people have come here first. If Barcade wasn’t around the corner we wouldn’t even be thinking about this,” Massoni says. “The fact that we are coming will bring other people to Jersey City, too, because it is a great market.”
Fred Shandler and Dan Richer chose Jersey City as the second outpost for their artisinal pizza empire after the success at Arturo’s in Maplewood, N.J. They opened Razza — which means “pure-bred” or “original” in Italian — in what they consider an emerging Jersey City neighborhood by the Grove St. PATH station last year.
And their Jersey City clientele eat up their pies, which use locally milled flour, wild yeast and veggies from New Jersey, New York and Pennsylvania. The Santo ($18), with sausage, shaved onion and chili oil atop a crust charred in a wood-burning oven, made Thrillist’s list of America’s top 33 pizzas.

“We feel that Jersey City is at a tipping point of receiving massive attention,” Shandler says. “We’re thrilled about being here.”
So are spouses Kevin and Alex Pemoulie. Kevin gave up a job working in Manhattan for James Beard Award-winning chef David Chang to open Thirty Acres in Jersey City; Alex juggles a full time job running the financial operations for Chang’s Momofuku group with running the front of the house at Thirty Acres.
“We were looking for a community feel. In New York we had a lot of friends in the restaurant world, but there wasn’t a sense of a community around us,” said Kevin.

His sister lived in Jersey City, and when the couple visited they fell in love with the neighborhood near Van Vorst park.
“Everyone here is really into food. They are thankful and excited for new places — but they will let you know if it sucks,” says Alex, laughing. “Jersey City is ready for a wider variety of restaurants.”
Local real estate broker Eugene Cordano agrees — and he says Jersey City’s culinary transformation is fueled by its residential explosion.

“Everything that is being built there is the demographic that restaurants like Thirty Acres would want to capitalize on,” Cordano says. “You have thousands and thousands of apartments there and people coming in, and a real lifestyle has developed in Jersey City.”
Thirty Acres, named for a Prohibition-era boxing arena in town, serves a mix of small plates and heartier dishes from roasted pears with sea urchin mayo, pickled squash, maitake and shiso ($14) to Spaghetti Nero with bottarga, garlic and chili flakes ($18).
The couple behind the restaurant view their food as seasonal, creative and a mixture of refined and casual.
“We call ourselves New New Jersey cuisine,” Alex says. “That’s not really a thing yet, but it’s starting with us.”

Our pre-Valentine’s Day event was hosted by LITM, and featured dessert vendors Milk Sugar Love and All Kinds of Whoopie (currently DBA Cholita Dessert Bar), as well as cocktails by LITM.  A ticket bought you two delectable dessert samples at each vendor, as well as two delicious Valentine’s Day themed cocktails.  To add to the fun, there was a photo booth with mustache cookies and other candies and goodies on tables for guests to take.

The night was made a success by all who came out to support, including Paul Silverman, Elizabeth and Michael Casalinho of JC Made, Feena Boutique, & Broa Cafe, Cheryl Lin & Jeremy Jacobsen of Jersey City Ties, Todd Maloof of PRIME Real Estate Group, Sara Gaona of Small Chick Big Deals, Ida Borroto of the Rutherford Woman’s Club & Summer Hortillosa of The Jersey Journal.
